Roasted beets

The Grandview Restaurant

I can't believe in all my years I've never been to the Grandview up on top of Mt.Hamilton. I've never even been up Mt. Hamilton. Last night I enjoyed this beautiful view while having a drink. Later, I had dinner at the Drying Shed, which I've never been to either, and it was nice. The Drying Shed is old school and reminds me of the original Bold Knight restaurant that used to be on Monterey Highway. I like the dark booths and the service was good.

I'm a little teapot short and stout

In trying to photograph my lemon tree, I did not anticipate my shadow being more funny than my tree is lemony.

I am turning into the Soup Nazi



This is mushroom soup. It is majorly kickass. I sauteed one red onion, then added five portabella mushrooms, cut into cubes, with water. I added one yellow squash cut very small, just for bulk. Sea salt to taste. Mushrooms make it easy since they're packed with flavor.

Gimme Lean - Sausage Style

I made another kickass soup yesterday. I tried Gimme Lean Sausage Style , and I love it.

I cooked it in a big pot. It's very sticky, while cooking. After it was "done" I added a little olive oil, one chopped red onion, several minced cloves of garlic, two yellow squash chopped, and a half a head of napa cabbage, chopped. After these got going I added cayenne, one box of low sodium chicken broth, four cups of water, two lemons that were cut in half, rind and all. Bring the soup to a high temperature without boiling and turn off the heat, then cover and let sit. Then add four chopped roma tomatoes. Take the lemons out after they've added their flavor (about 15 minutes) Add salt to taste, and add fresh cilantro onto each bowl right before eating. I use scissors for the cilantro. 

The lemon and cayenne add a zing to the soup. The ingredients are guilt free and the broth is a nice low calorie way to feel full and eat healthy at the same time.

PS if you don't have a ladle, as I don't, measuring cups are great substitutes.
